Description

Do you ever have those mornings when you wake up and just want to eat cookies? Please say it’s not just me…Well what if I told you that you could have something for breakfast that isn’t a cookie but tastes like one? And what if I then told you that said cookie-like breakfast is so full of good ingredients that you can eat it guilt-free? Problem solved with my peanut butter and banana granola!

Ingredients

  • 3 cups Rolled Oats
  • 2 Tablespoons Brown Sugar
  • 2 teaspoons Cinnamon
  • ½ cups Peanut Butter
  • 1  Banana, Peeled And Mashed
  • 1 teaspoon Vanilla Extract
  • ¼ cups Chocolate Chips (optional)

Preparation

Preheat oven to 150 C. In a 9×13 baking dish combine oats, brown sugar and cinnamon.

In a microwave-safe jug combine peanut butter, banana and vanilla extract. Microwave for up to 1 minute to slightly melt the peanut butter. This will make it easier to stir through the oats.

Pour the peanut butter mixture over the dry ingredients and stir thoroughly until the oats are fully coated. Bake at 150 C for 40 minutes, stirring every 10-15 minutes. Remove from oven. Leave to cool for 5 minutes before stirring in the chocolate chips.

Allow to cool completely before storing in an airtight container.
