Description

Slow Cooker Mexican Beef Barbacoa is a tender, juicy, shredded meat cooked in a slow cooker with lime juice, garlic, onion, chipotles in adobo, and other delicious Mexican flavors. Perfect filling for tacos, burritos, and more!

Ingredients

  • 3 pounds Chuck Roast
  • ½ Tablespoons Salt
  • 2 pinches Black Pepper
  • 1  Yellow Onion, Chopped
  • 1  Tomato, Choopped
  • 3 cloves Garlic, Minced
  • 2  Limes, Juiced
  • 1 can (4 1/2 Oz. Size) Green Chiles
  • 1  Chipotle Adobo From Can, Chopped
  • 1 Tablespoon Cumin
  • ½ Tablespoons Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1  Bay Leaf
  • ¼ cups Water Or Beef Broth
  • 1 Tablespoon Fresh Cilantro For Garnish

Preparation

Trim large chunks of fat off roast. Cut roast into large chunks. Season meat with salt and pepper and sear in a hot pan until all sides have browned. Add meat to slow cooker.

Add remaining ingredients and stir to combine. Cook on low for 5–6 hours, or until meat is pull-apart tender. Garnish with fresh cilantro.
