Baked Grits Cakes

Description

A wonderful breakfast for two with a side of scrambled eggs!

Ingredients

  • 1 cup Instant Grits
  • ¼ cups Milk
  • ½ teaspoons Iodized Salt
  • ½ teaspoons Black Pepper
  • 2 Tablespoons Butter, Melted
  • ½ cups Your Favorite Cheese (Grated, Optional)
  • ¼ cups Maple Syrup (warmed) Optional

Preparation

Preheat oven to 425 F. Using a standard size muffin tin, liberally spray 4 wells with non-stick baking spray (I use each corner of the muffin tin).

In a mixing bowl add grits through melted butter and stir with a spatula. Fill each prepared muffin well and place in the oven and bake 12-14 minutes. They will be a golden color.

Remove from oven (you can now add cheese, if desired). Allow to slightly cool and remove two to a plate. Add warmed maple syrup if desired (I always do). Add some scrambled eggs on the side and dig in. We love grits this way! Hope you enjoy!
