Ingredients
- 12 ounces, weight Seasoned Croutons
- 16 ounces, weight Frozen Broccoli (Stems And Florets), Thawed, Drained
- ½ whole White Onion, Such As Sweet Vidalia, Finely Diced
- 1 teaspoon Black Pepper
- 2 whole Large Eggs, Beaten
- 2 cups Freshly Grated Parmesan
Preparation
Preheat oven to 365ºF. Prepare 2 rimmed nonstick baking sheets.
In a blender or food processor (I used a food processor), pulse croutons several times. Add broccoli (drained) and process several minutes to combine. Add onion, black pepper, and eggs; process until combined, scraping down sides of bowl as needed. Remove blade and fold in Parmesan.
Using a scoop or spoon, form round balls and place on baking sheet pans in a single layer. Bake until golden brown, about 15 minutes.
Serve on a platter with some toothpicks. You can serve these with sauce for dipping, if desired—we love them plain. Hope you enjoy!
