Chocolate Peanut Butter Avocado Pudding

Description

Avocado makes this rich chocolate pudding so creamy and smooth. Not only is this delicious straight out of the refrigerator, it makes great frozen “fudgesicles” too!

Ingredients

  • 1-½ whole Ripe Avocados
  • 1 whole Large Ripe Banana, Peeled And Cut Into Small Chunks
  • ½ cups Unsweetened Cocoa Powder
  • ½ cups Creamy Peanut Butter
  • ½ cups Maple Syrup (can Substitute Agave Nectar Or Honey)
  • ¼ cups Milk
  • ½ teaspoons Pure Vanilla Extract

Preparation

Scoop avocado and banana chunks into the bowl of a food processor fitted with a steel blade. Pulse to combine. Add cocoa powder, peanut butter, maple syrup, milk and vanilla. Process the mixture until smooth and creamy. Taste and adjust the sweetness to your taste.

Transfer pudding to a bowl or individual serving dishes, cover and refrigerate a few hours or overnight.

Serve with a dollop of whipped cream or whipped topping, if desired.

Note: This mixture can also be put into popsicle molds and frozen for homemade “fudgesicles”.
