Description
Tom Kha Ghai, a Thai Chicken Coconut Soup, is one of the main national dishes of Thailand.
Ingredients
- 800 milliliters Coconut Milk
- 400 milliliters Fresh Water
- 100 grams Mushrooms, Sliced
- 4 whole Red Chili, Sliced
- 8 leaves Kaffir Lime
- 1 piece (about 1-inch Size) Galangal, Sliced
- 2 pieces (about 2-inch Size) Lemongrass, Sliced
- 2 Tablespoons Brown Sugar, Or More To Taste
- 1 Tablespoon Fish Sauce, Or More To Taste
- 500 grams Chicken Breast, Sliced
- Fresh Lime Juice, To Taste
- Fresh Cilantro To Taste
Preparation
Preheat a large sauce pan. When hot, add all ingredients except chicken, lime, and cilantro. Bring to boil. As soon as it boils, lower heat and simmer for 5 minutes.
Add chicken breast and simmer on medium heat for 5 minutes.
Turn off heat. Add some lime juice and cilantro. If needed, also add some more sugar and fish sauce. Mix well and let cool a bit.
7. Serve right away OR let it cool down and warm up a few hours later. Serve with more fresh Cilantro and chilis if needed.
