Slow Cooker Pulled BBQ Chicken

Description

Easy, delicious and great when you’re looking for comfort food. This dish is a great example of why I have learned to love healthy foods.

I went with Sweet Baby Ray’s BBQ Sauce for two reasons: one, it’s flippin’ good! And two, it’s a great sauce that works with most everyone’s taste in BBQ sauce. But of course, you can swap it out for your favorite.

Ingredients

  • 5 pieces (about 5 Oz. Size) Chicken Breast, Boneless, Skinless
  • 2-¾ cups Sweet Baby Ray’s BBQ Sauce
  • 5 cloves Garlic, Minced
  • 1 cup Pineapple, Chopped
  • 5-½ Tablespoons Dried Basil

Preparation

In a large slow cooker, add chicken breasts along the bottom. Cover with BBQ sauce, then add the garlic on top. Set on high for 4 hours and let it cook uninterrupted.

After 4 hours, the chicken will fall apart. Using 2 large forks, pull the chicken breasts in opposite directions until shredded.

Add pineapple and basil. Serve by itself, in a wrap or on a whole wheat bun.
