Sweet, fluffy, crispy waffles loaded with colorful sprinkles.
Ingredients
- 2 Large Eggs, Separated
- 1-½ cup Gluten-free Pancake Mix (I Use Pamela’s)
- 1 Tablespoon Granulated Sugar
- ¼ cups Rainbow Sprinkles
- ½ teaspoons Vanilla Extract
- ¼ teaspoons Almond Extract
- 1 Tablespoon Canola Oil
- ¾ cups Almond Milk
- Maple Syrup, For Topping
Preparation
Preheat waffle iron.
In a medium-sized bowl, whip egg whites until stiff.
In a separate bowl, whisk together gluten-free pancake mix, sugar, and sprinkles. Add egg yolks, vanilla and almond extract, canola oil, and almond milk to the bowl. Whisk until smooth. Gently fold in egg whites.
Spray waffle iron with nonstick baking spray. Ladle 1/3 cup batter into center of waffle iron. Cook until golden brown, about 3 minutes.
Serve with maple syrup.
