Honey Mustard Pork Tenderloin

Description

A dish from the eastern European kitchen. I know that pork isn’t as healthy as chicken or beef, but sometimes we need to expand our food horizons.

For better taste, I recommend you to buy pork from a butcher or a local farmer.

Ingredients

  • 500 grams Pork Tenderloin
  • Salt And Pepper
  • 1 Tablespoon Mustard
  • 1 Tablespoon Grainy Mustard
  • 1 teaspoon Honey
  • 1 pinch Thyme
  • 200 grams Potatoes
  • Olive Oil, As Needed

Preparation

Heat oven to 200ºC (390ºF). Massage pork with salt and pepper. Mix mustards, honey, and thyme in a bowl. Massage half of this marinade into pork.

Put pork into baking dish. Chop potatoes into cubes. Drizzle with olive oil and season with salt and pepper. Mix and add to the baking dish. Cover with foil and bake for 25 minutes. This way the meat will be juicier and more tender.

Remove foil. Brush pork with remaining mustard sauce and decrease oven temperature to 180ºC (355ºF). Bake for another 20 minutes (baking time depends on the size of the pork).
