Ingredients
- 1 Tablespoon Olive Oil Or Coconut Oil
- 2 cloves Garlic, Chopped
- 2-½ cups Swiss Chard (or Other Greens)
- 2 Happy Egg Co. Free-est Of The Free Range Eggs
- ½ cups Roasted Vegetables, I Used Butternut Squash (optional)
- Salt And Pepper, to taste
Preparation
Heat olive oil over medium high heat. Add garlic and saute a minute or two. Add greens and stir gently. Cook until wilted.
Place greens in a bowl. Add a little more olive oil and eggs in a skillet. Fry until done to your liking.
Put warm eggs on top of greens and add any roasted vegetables. Salt and pepper to taste.
