Description
This Easy Pesto Pasta Salad is jam-packed with fresh arugula, grape tomatoes and bites of sun dried tomato, covered in a delicious pesto sauce!
Ingredients
- 1 box (16 Oz. Size) Pasta (Wheat, Whole Grain, Veggie)
- 2 cups Arugula
- ⅓ cups Sun Dried Tomato, Chopped
- 1 cup Grape Tomatoes, Whole
- FOR THE PESTO:
- 1 cup Basil
- ¼ cups Olive Oil
- ¼ cups Water
- 2 cloves Garlic
- 1 pinch Salt
- ½ cups Almonds (or Nut Of Choice)
Preparation
Cook pasta according to package instructions. For cold pasta, I always cook just a minute under recommended time. Drain and set aside.
Add pesto ingredients to a blender cup and work it for about 2 minutes. Add pasta, arugula, sun dried tomato, grape tomatoes and pesto to a large glass bowl and mix to combine. Serve cold or at room temperature.
