Crockpot Blackberry Brandy

Description

This smelled really wonderful cooking away in the crockpot and was equally enjoyable in the glass! A bonus is its pretty color and it looks very festive in your best holiday glassware. However, most of mine will end up in a Solo cup for sipping around a bonfire! Cheers!

Ingredients

  • 2 bags 16 Ounce Bags, Frozen Blackberries, Partially Thawed
  • ¾ cups White Sugar
  • ½ cups Dark Brown Sugar
  • 1 whole Lemon, Washed Well
  • 1 Tablespoon Crushed Bay Leaves
  • 3 cups Water
  • 2 cups Brandy

Preparation

Mash the berries with the sugars in a crockpot. Using a citrus zester, zest the entire lemon into the contents. Add the bay leaves. Add the water and stir well. Put the lid on and cook on low for 3 hours. Then stir and cook on high for another hour.

Turn off the heat. Let the mixture cool enough to handle then strain it well. Strain as many times as necessary, pouring it into a bowl through a fine sieve until only the liquid remains.

Stir in the brandy and let it cool completely. Store in airtight containers.
