Description

The goodness of a jalepeno popper inside a juicy chicken breast: the ultimate comfort food meal.

Ingredients

  • 5 slices Bacon
  • 8 ounces, weight Cream Cheese
  • 1-½ cup Shredded Extra-Sharp Cheddar Cheese, Divided
  • 1 whole Jalapeno, Diced
  • 2 cloves Garlic, Thinly Sliced
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • ½ teaspoons Spanish Smoked Paprika
  • 6 whole Chicken Breasts
  • 1 whole Jalapeno, Sliced
  • Fresh Cilantro For Garnish

Preparation

Preheat oven to 425ºF and place bacon on a baking sheet. Cook for 15 minutes on each side, for a total of 30 minutes, until crispy. To save time, cook bacon the night before if desired.

Combine cream cheese, 1 cup of extra sharp cheddar cheese, diced jalapeno, garlic, 4 slices of crumbled bacon, salt, pepper, and paprika in a small bowl. Mix well.

Place large spoonfuls of the cream cheese mixture in the middle of each chicken breast. Fold over and use a toothpick to hold in place.

Reduce oven temperature to 350ºF and bake for 30 minutes. At the halfway point, remove chicken from the oven, top with remaining 1/2 cup of shredded cheese and the sliced jalapenos. Return to the oven to finish baking.

Serve with remaining crumbled bacon and fresh cilantro.
