Watermelon Caprese with Balsamic Reduction

Description

This fun spin on a traditional caprese salad uses watermelon instead of tomatoes, and it is the perfect way to celebrate the end of summer!

Ingredients

  • ½ cups Balsamic Vinegar
  • 8 ounces, weight Fresh Seedless Watermelon, Cut Into 1/2 Inch Round Slices
  • 8 ounces, weight Fresh Mozzarella, Cut Into 1/2 Inch Round Slices
  • 6 whole Fresh Basil Leaves
  • 1 Tablespoon Extra Virgin Olive Oil
  • Salt And Black Pepper

Preparation

In a small saucepan, over medium heat, add the balsamic vinegar. Bring to a boil, and then reduce the heat to a simmer. Simmer the balsamic vinegar until it has been reduced by at least half. Remove from heat and set aside.

On your serving dish, layer the watermelon, fresh mozzarella and basil in any order that you wish. Drizzle the extra virgin olive oil and balsamic reduction on top. Sprinkle with sea salt and black pepper to taste. Enjoy!
