Boursin Bacon Egg Bites

Description

All the parts of the best breakfast in a single sinfully delightful mouthful. Bacon wrapped around potato, with herb and garlic Boursin cheese, egg and Parmesan cheese. Delicious!

Ingredients

  • 6 pieces Bacon
  • 1  Large Potato, Chopped Into 1/4″ Cubes
  • 2  Eggs
  • 2 Tablespoons Cream
  • 2 Tablespoons Boursin Herb And Garlic Cheese
  • 2 Tablespoons Shredded Parmesan Cheese
  • ¼ teaspoons Ground Pepper

Preparation

Preheat oven to 350 F. Prepare a muffin tray by greasing the edges of 6 cups or inserting 6 silicone liners.

Cut raw bacon pieces in half. Insert two half pieces of bacon into each muffin tin cup, lining the sides, forming a bacon circle and allowing the ends to overlap each other.

Add potato cubes to the bottom of each bacon cup, filling halfway to the top. Bake for 40-45 minutes, until bacon and potatoes are almost cooked through. Remove from the oven and set aside.

In the meantime, in a medium sized bowl mix together eggs, cream, Boursin, Parmesan cheese and pepper.

Pour the egg mixture over the top of each potato cup. Bake another 15-20 minutes, until egg muffins are puffy and slightly golden brown
