Description
A fresh salsa with grilled peaches. Delicious with chicken, pork or fish, or just with some salty tortilla chips!
Ingredients
- 1 whole Peach
- 1 clove Garlic
- ½ Tablespoons Olive Oil
- 1 whole Avocado
- 1 whole Lime, Juiced
- 1 whole Tomato, Seeded
- 2 whole Green Onions
- 1 whole Jalapeño Pepper, Seeded
- ½ cups Cilantro Leaves, Torn
Preparation
Preheat the grill to medium high heat. Slice the peach in half and remove the pit. Peel the garlic clove. Baste the peach and garlic with the olive oil and place on the hot grill, cut side down. Put the lid on and grill for 5-10 minutes or until softened. Remove from grill and allow to cool.
Peel, pit and chop the avocado and toss it with the juice of the lime in a medium bowl. Chop the tomato, green onions and jalapeño pepper. Add this to the bowl along with the cilantro.
When the peach and garlic have cooled, chop the peach and press the garlic through a garlic press. Add them to the bowl and toss everything gently to combine. Cover and chill for about 20 minutes to allow the flavours to meld.
Note: I seeded the jalapeño, as I wanted the flavour but not the heat. If you like things more spicy leave the seeds in. The tomato is also seeded to avoid having a really runny salsa. Also, I added quite a lot of cilantro because I love it, but you could adjust this to be less if you don’t like as much, or take it out entirely if you’re not a fan!
