Enjoy oatmeal in a fun and visually appealing way. Make a parfait!
Ingredients
- 2 whole Rome Apples
- 2 Tablespoons Agave
- ¼ cups Brown Sugar
- 1 teaspoon Cinnamon
- ½ cups Apple Cider, Unsweetened
- 1-½ cup Quick Cooking Oats, Gluten Free
- 3 cups Water
- ¼ cups Cranberries (optional)
- ¼ cups Soy Creamer (optional)
Preparation
Peel and core the apples. Then cut them into a 1/2″ dice.
Place the diced apples, agave, sugar, cinnamon and cider into a saucepan. Cook over medium heat for 10-15 minutes. Use a slotted spoon to scoop out the apples. Set them aside in a bowl.
Into the same pan, add the gluten free oats and water. Cook for 5 minutes. Stir occasionally. After 5 minutes, turn off heat.
Assemble the parfaits in 2 tall glasses by spooning in alternating layers of cooked oats, then cooked apples, cooked oats, cranberries, etc.
Top them off with soy cream for a creamier oatmeal. Enjoy.
