Description

Oven roasted chicken basted with an olive oil fresh herb mix. An easy and delicious fall family meal!

Ingredients

  • 1 whole (about 5 To 6 Lb. Size) Roasting Chicken
  • 8 whole Gold Potatoes, Peeled
  • ½ cups Olive Oil
  • ¼ cups Fresh Parsley, Chopped
  • ¼ cups Fresh Oregano, Chopped
  • ¼ cups Fresh Basil, Chopped
  • 2 Tablespoons Paprika
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • ½ teaspoons Sea Salt

Preparation

Heat oven to 350ºF.

Rinse and dry chicken. Place in a large roasting pan. Surround with peeled potatoes. Mix olive oil with fresh chopped herbs. Baste chicken and potatoes with mixture. Sprinkle with paprika, pepper, garlic powder and salt.

Roast in oven for about 90 minutes. Test with meat thermometer in thickest portion of breast. Temperature should be 180ºF. Let cool slightly for easier carving and serve with a green salad.
