Description

Soft, chewy, and thick coffee flavoured cookies topped with a coffee drizzle!

Ingredients

  • 2 cups Plain Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cornflour Or Cornstarch
  • ½ teaspoons Baking Soda
  • 4 Tablespoons Instant Coffee Granules, Divided
  • ½ cups Unsalted Butter
  • ½ cups Caster Sugar
  • ¼ cups Light Brown Sugar
  • 1  Large Egg
  • 1 Tablespoon Water
  • ¼ teaspoons Salt
  • 1 cup Chocolate Chips
  • FOR THE DRIZZLE:
  • ½ teaspoons Instant Coffee Granules
  • 1 Tablespoon Water
  • ½ cups Icing Sugar

Preparation

For the cookies:
Preheat the oven to 180ºC (350ºF or Gas 4). Line a baking tray with parchment paper, or a silicone mat. Set aside.

Whisk together flour, baking powder, cornflour, baking soda, salt, and 2 tablespoons of instant coffee granules. Set aside.

Microwave butter for 40–60 seconds, to almost melt it all. Whisk in the sugars until combined. Add egg and mix until combined. Dissolve remaining 2 tablespoons coffee in 1 tablespoon of water, then add to the wet ingredients. Mix until combined.

Add the dry ingredients, and mix until just combined. Fold in chocolate chips.

Using a medium cookie scoop, scoop out 14 to 16 dough balls, then place on the prepared baking tray. Bake for 8–10 minutes. Allow to cool on the baking tray for 10 minutes before transferring to a wire rack to cool completely.

For the drizzle:
Dissolve the coffee granules in the water. Add icing sugar and mix until smooth. Drizzle over the cooled cookies.
