Olives stuffed with smoked sprats.
Ingredients
- 5-⅝ ounces, weight Canned Sprats In Oil
- 2 teaspoons Butter (soft But Not Melted)
- 1 Tablespoon Lemon Juice
- 1 dash Black Pepper
- 4-¼ ounces, weight Pitted Green Olives
- 1 bunch Parsley
- Lemon Wedges, Optional Garnish
Preparation
Take 7 sprats, put them in a small bowl and mash thoroughly. Add the butter, lemon juice and pepper and mix well. Stuff the olives with the sprats mixture with the help of a culinary syringe. Put the stuffed olives on a large plate. Add the rest of the sprats and decorate with parsley leaves and lemon slices.
