Squash Caviar – Russian Vegetable Paste

Description

Squash Caviar (Ikra) is an unbelievably yummy vegetable paste which is extremely popular in Russia. It’s so good on bread or crackers! Pure delight!

Ingredients

  • 3  Yellow Squashes Or Zucchini
  • 4 Tablespoons Oil
  • 1 clove Garlic, Minced
  • ½  Chili Pepper, Seeded And Chopped Finely
  • 1  Carrot, Peeled And Sliced Into Circles
  • 2  Onions, Peeled And Cut Into Half-moon Circles
  • 1 Tablespoon Tomato Paste
  • 1 teaspoon Sugar
  • 2 teaspoons Salt
  • 2 Tablespoons Cider Vinegar

Preparation

1. Preheat oven to 400 F. Wash and slice the squashes into 1/2-inch circles. Lay the slices on a greased rimmed baking tray in a single layer. Place the baking sheet into the oven and roast for 30 minutes. Remove from oven.
2. Place the roasted squash into a colander and press on it with a spoon to remove excess liquid.
3. While the squash is in the oven, you can prepare the other veggies. In a large non-stick skillet heat up the oil, add the garlic and chili pepper and cook over medium heat for a minute. Then add the carrot and sauté for 2 minutes.
4. Next, add the onion, reduce heat to medium-low and cook for 10 minutes until the vegetables are tender. Add the tomato paste, sugar, salt and vinegar, mix well and remove from heat.
5. Put the squash and fried vegetables into a bowl and puree it using an immersion blender. Serve cold. You will get about 1.5 pint/700 ml of amazing squash paste.
