Gorgonzola & Walnut Rounds

Description

Great appetizer or snack for the bleu cheese lovers. It’s great for picnics, family reunions, etc.

Ingredients

  • 1 block (8 Oz. Size) Cream Cheese, Softened
  • 1 container (8 Oz. Size) Gorgonzola (or Mild Bleu Cheese Crumbles, Room Temperature)
  • ⅔ cups Dried Apricots, Finely Chopped
  • ¼ teaspoons Black Pepper
  • 1-½ cup Walnut Pieces

Preparation

In a bowl add softened cream cheese and Gorgonzola cheese. Mix with a rubber spatula. Add apricot pieces and black pepper; mix well until smooth.

On a plate add walnut pieces. Using your clean hands and a teaspoon scoop cheese mixture into rounds and place on top of walnut pieces, rolling the ball to coat all sides. Place balls on a platter and repeat until all cheese mixture/walnuts are used. (I usually wet my hands to roll the rounds out).

Cover the platter tightly with plastic wrap and refrigerate for one hour before serving. I like to serve these with a variety of crackers. Enjoy!
