Ginger and Grilled Watermelon Cocktail

Description

This cocktail quenches your thirst and makes for a great deck sipper. Why not celebrate this ginger drink during a cookout? You might be eating watermelon, already, right? So why not throw a little on the grill to try an interesting take on a grilled cocktail. The Ginger goes so well with the watermelon and rum that this drink is a keeper. Everything summer and tasty in this recipe.

Ingredients

  • 2 slices Watermelon
  • 1 ounce, fluid Ginger Syrup, Plus More To Brush On Watermelon
  • 2 ounces, fluid Rum
  • 1-½ cup Ice
  • Soda Water To Top

Preparation

Preheat grill to medium temperature.

Lightly glaze watermelon with ginger syrup. Place on grill and cook for 2–3 minutes each side until char marks are visible. Remove and remove rind from just one of the slices. Reserve remaining watermelon with rind for garnish.

In a shaker, add watermelon (without rind), ginger syrup and rum. Muddle. Add ice and stir for 30 seconds.

Add to highball glass and top off with soda water. Gently stir to incorporate soda water. Garnish with reserved watermelon with rind.
