Description

Perfect sized energy bites to fuel your body before or after a workout. These little bites are not only delicious, but also vegan and gluten-free!

Ingredients

  • 1 cup Old Fashioned Oats
  • ¼ cups Flax Meal
  • 1 teaspoon Espresso Powder
  • 2 Tablespoons Unsweetened Cocoa Powder
  • 2 Tablespoons Unsweetened Shredded Coconut
  • 1 pinch Salt
  • ½ teaspoons Vanilla Extract
  • 5 Tablespoons Peanut Butter
  • ¼ cups Pure Maple Syrup

Preparation

In a large bowl combine all of the ingredients. Whisk or stir with a spatula until everything comes together. Cover and place the mixture in the fridge for 30 minutes to chill.

Once chilled scoop out tablespoon sized portions and roll each into a ball. Store the energy bites in an airtight container in the refrigerator for up to a week.
