Description

Tzatziki is a Greek yogurt-based sauce that is traditionally served alongside grilled souvlaki (skewers of grilled meat). As much as I like it as a sauce for grilled chicken, beef and lamb, I believe it truly shines as party dip with pita chips and carrot sticks.

Ingredients

  • 1  Large English Cucumber, Washed, Cut In Half Lengthwise, And Seeded
  • 3 cloves Garlic, Minced Finely
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Black Pepper
  • 3 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons White Vinegar
  • 1 cup Plain Sour Cream (whatever Fat Content You Wish)
  • 1-½ cup Plain Greek Yogurt (whatever Fat Content You Wish)
  • 2 Tablespoons Fresh Dill, Minced Finely

Preparation

1. Grate cucumber on a box grater that you have set in the middle of a clean tea towel (so that the cucumber falls right into the towel).

2. Gather up the edges of the towel and squeeze out excess moisture from the cucumber (this will take some time, but the more water you squeeze out, the less watery your dip will be).

3. Place squeezed cucumber in a large bowl.

4. Add garlic, salt, pepper, olive oil, white vinegar, sour cream, Greek yogurt, and dill. Stir to combine. Taste for seasoning and adjust as needed.

5. Serve as a topping or dip for grilled and roasted meats (I love it with lamb) or with carrots sticks and pita chips (or with a spoon out of the bowl).
