Time to break out the barbecue for these flavorsome curried chicken kebabs!
Ingredients
- ½ cups Greek Yogurt
- ¼ cups Fresh Lime Juice
- 1 Tablespoon Fresh Ginger, Finely Chopped
- 2 cloves Garlic, Crushed
- 1 whole Dried Chile, Finely Chopped
- 1 Tablespoon Hot Curry Powder
- 1 teaspoon Tomato Paste
- 1 teaspoon Sea Salt
- ½ teaspoons Fresh Ground Black Pepper
- 2 whole Chicken Breasts, Cut Into Cubes
- 4 sprigs Fresh Coriander, Finely Chopped
Preparation
In a medium bowl, combine all of the ingredients except the chicken breast and fresh coriander. Stir well to combine and add the chicken pieces. Stir well to coat, cover and refrigerate for several hours.
Remove from fridge and put chicken pieces on skewers. Have your barbecue set to a medium to high heat and lay chicken on the barbecue. Cook for about 15 minutes, rotating kebabs as they cook. Cooking time will vary depending on the heat of your barbecue. Remove from heat, garnish with fresh coriander, and serve straight away.
Note: I suggest serving these with Greek yoghurt and caramelized onions.
