Description
Big, fluffy pancakes that are filled with all of the flavors of an oatmeal raisin cookie!
Ingredients
- 1 cup All-purpose Flour
- ¼ cups Whole Wheat Flour
- ½ cups Quick Oats
- ¼ cups Brown Sugar
- 2 teaspoons Cinnamon
- ½ teaspoons Nutmeg
- ⅛ teaspoons Ginger
- ⅛ teaspoons Cloves
- ½ teaspoons Salt
- 2 teaspoons Baking Powder
- ½ teaspoons Baking Soda
- 1-⅓ cup Non-fat Milk
- 1 Egg
- 1-½ teaspoon Vanilla Extract
- ½ cups Raisins
Preparation
1. In a large bowl, whisk together flours, oats, cinnamon, brown sugar, cinnamon, nutmeg, ginger, cloves, salt, baking power, and baking soda.
2. In a small bowl, whisk together milk, egg, and vanilla. Add wet ingredients into the dry ingredients and stir until just combined. Stir in raisins.
3. Bring a skillet or griddle to medium heat. Spray with non-stick cooking spray.
4. Pour ⅓ cup of batter onto the hot skillet. Using measuring cup, lightly spread out batter in a circular form. Don’t crowd the pan but cook as many as you can fit onto your griddle at one time. Cook until bubbles appear on the surface, about 2-3 minutes and flip. Cook for another 1-2 minutes on the other side. Remove from the griddle and set on a plate while you finish cooking the rest of the batter.
5. Serve warm.
