Description
A healthy, fibre-rich white bean dip with cherry tomatoes, feta cheese and basil—an easy appetizer with fresh summer flavours!
Ingredients
- 2 cans (15 Oz. Size) White Kidney Beans, Rinsed And Drained
- 1 Tablespoon Italian Seasoning Mix
- ¼ cups Extra Virgin Olive Oil Plus More For Drizzling On Top
- Salt And Freshly Ground Black Pepper, To Taste
- 1 cup Cherry Tomatoes, Halved
- ½ cups Crumbled Feta Cheese
- 10 whole Fresh Basil Leaves, Sliced
Preparation
In a food processor combine the beans, seasoning mix, olive oil and salt and pepper and pulse until smooth. If the mixture is too thick, add a splash of water and mix again. Spoon bean mixture into a shallow serving dish and smooth the top with a spatula. Top the dip with the tomatoes, feta and basil. Drizzle with olive oil and serve with whole grain crackers or crusty bread.
