Description
What could be better than a bite size cheese ball, especially one that is covered in chopped pistachios and Craisins. Fun to make and even more fun to eat.
Ingredients
- ¾ cups Finely Chopped Craisins Or Cherries, Divided
- 6 ounces, weight Plain Goat Cheese
- 2 ounces, weight Cream Cheese
- ½ cups Finely Chopped Pistachios
Preparation
Add 1/4 cup of the chopped craisins to the goat cheese and cream cheese and mix in just until incorporated.
Combine the remaining Craisins and chopped pistachios in a shallow bowl. If pistachios aren’t already salted, add a large pinch of salt to the mixture to taste if desired.
Divide cheese Craisin mixture into 16 evenly-sized balls. Or just dollop a little of the cheese mixture into the chopped pistachio/craisin mixture and roll each ball until well covered. Transfer to serving plate. Put a pick into the center of each ball, if desired.
Refrigerate until ready to serve (up to 1 day).
