A great summer sipper!
Ingredients
- FOR THE CUCUMBER SIMPLE SYRUP:
- 1 cup Sugar
- 1 cup Water
- 2 whole Small Cucumbers
- FOR THE COOLER:
- 4 cups Watermelon, Cubed
- 4 ounces, fluid White Rum
- 3 ounces, fluid Simple Syrup Infused With Cucumber
- Soda Water
- Watermelon And Cucmber For Garnish
Preparation
For the cucumber simple syrup: Place sugar and water in a small saucepan over medium low heat and stir to dissolve sugar. Remove from heat and let cool slightly. Add the cucumber and pour the syrup into a sealed container and place it into the refrigerator to cool.
For the cooler: Add the watermelon, rum, 3 ounces simple syrup into a blender and blend. Pour into 4 glasses with ice, top with soda water. Use extra watermelon and cucumber to garnish.
