Smoked Salmon and Caramelized Onion Dip

Description

Smoked salmon dip with caramelized Walla Walla onion and Gouda.

Ingredients

  • 2 Tablespoons Butter, For Caramelizing Onion
  • 1 whole Onion, Peeled And Thinly Sliced (I Used Walla Walla Onion)
  • 1-½ cup Gouda, Shredded
  • 8 ounces, weight Cream Cheese, Softened
  • ¾ cups Mayonnaise
  • ¼ teaspoons Cayenne Pepper
  • 3 Tablespoons Chives, Minced
  • 1 Tablespoon Parlsey
  • 1 clove Garlic, Minced
  • 6 ounces, weight Smoked Salmon, Flaked (not Lox)

Preparation

Preheat oven to 350 F.

In a skillet over medium high heat, melt butter. Once butter starts to bubble add in thinly sliced onion and stir. Cook onion, stirring occasionally until it reduces and becomes golden brown and soft. Remove from skillet and allow to cool slightly.

In a large bowl mix together the shredded Gouda, cream cheese and mayonnaise until smooth and combined. Mix in pepper, herbs and garlic. Stir in caramelized onion and flaked smoked salmon.

Spoon into an oven safe dish (I used a small gratin dish) and bake for 25-30 minutes, or until golden and bubbling on top. Serve with crackers, chips or chunks of bread.
