Description
A crunchy, spicy, slightly sweet nut mix with a kick of heat. Served with fresh blueberries, it’s a great healthy treat.
Ingredients
- 1 cup Whole Shelled Almonds, Raw
- ½ cups Walnuts, Shelled
- ¼ cups Shelled Raw Pistachios
- 1-½ Tablespoon Honey
- 1 teaspoon Canola Oil
- ½ teaspoons Chipotle Powder
- ¼ teaspoons Cayenne Pepper
- ¼ teaspoons Cinnamon, Ground
- ½ teaspoons Kosher Salt
- 1 cup Barbara’s Original Puffins Cereal
- 1-¼ cup Blueberries, Fresh
Preparation
Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper; set aside.
In a large bowl, add almonds, walnuts and pistachios; set aside.
In a small saucepan over low heat, add honey, oil, chipotle powder, cayenne and cinnamon. Cook until warmed, stirring well.
Pour the honey mixture over the nuts and stir with a rubber spatula until coated. Sprinkle salt over nuts and mix until combined.
Spread nut mixture in a single layer on prepared baking sheet.
Bake until golden brown, 20 to 25 minutes. Remove pan from oven and set it on a rack. Let it cool completely. Transfer baked nut mixture to a large bowl. Add cereal and toss to combine.
To serve, combine 1/4 cup of the nut mixture with 1/4 cup fresh blueberries.
Store nut mixture in an airtight container for up to 1 week (don’t add the blueberries when storing it).
