Description

Smoked salmon, perfectly scrambled eggs and mashed avocado on toast makes a delicious and easy brunch.

Ingredients

  • 6 whole Eggs
  • 2 Tablespoons Milk
  • Salt And Pepper, to taste
  • 2 whole Avocados
  • 6 pieces Rye Bread, Toasted
  • 7 ounces, weight Smoked Salmon

Preparation

Crack the eggs into a medium bowl and whisk in the milk. Season with salt and pepper. Scramble the eggs in a non stick skillet over medium heat until firm and cooked through. Transfer to a bowl.

Peel, pit and mash the avocado in a small bowl and season with salt and pepper.

Serve the toast with a spread of avocado, a scoop of eggs, and a topping of smoked salmon.
