Description
These bars with the wonderful shortbread crust are just the best. They are perfect for that holiday party or to box up and give as gifts.
Ingredients
- 2 cups All-purpose Flour
- 1 cup Sugar
- ½ teaspoons Baking Soda
- ½ teaspoons Salt
- ¾ cups Butter, Softened
- 1 cup Pecans, Finely Chopped
- 10 ounces, weight Apricot Preserves
Preparation
In a medium mixing bowl, combine flour, sugar, baking soda, and salt. Mix well and then stir in butter with a fork and continue mixing until mixture is crumbly. Mix in pecans and stir well.
Press 1/2 of the mixture into a 13×9 inch baking pan. Make sure to press firmly and make an even layer. Bake at 350ºF for 15 minutes.
Spread the preserves over the crust to make a nice even layer and top with the remaining crust. Return to oven to bake for 30 minutes. Cool on a wire rack and then cut into bars.
