Crispy Breakfast Quesadillas

Made deliciously with sage sausage, eggs and lots of cheese.

Ingredients

  • ½ pounds Sage Breakfast Sausage
  • 3  Eggs
  • ¼ teaspoons Ground Black Pepper
  • 2 Tablespoons Milk
  • 2 Tablespoons Butter
  • 4  Flour Tortillas (Soft Taco Size)
  • 1 cup Shredded Sharp Cheddar Cheese
  • 1-⅓ cup Shredded Jack Cheese
  • ½ cups Salsa

Preparation

Preheat the oven at 375 F.

Heat a skillet on medium heat and add the sausage. While cooking the sausage break it up into small pieces with a spoon or spatula. When the sausage is done cooking and is nice and browned, remove it from the pan onto a paper towel and set aside.

In a medium size bowl, add the eggs, pepper and milk. Whisk together and set aside for a moment.

Heat a skillet on medium heat and add ½ tablespoon of butter. As it’s melting pour in the egg mixture and stir as they cook. When the eggs are scrambled and done to your liking, remove them from the heat and set aside for just a moment.

Grease a cookie sheet with about ½ tablespoon of butter. Lay two of the tortillas on the cookie sheet. Add a layer of shredded cheese on each tortilla reserving half of the quantity of cheese for later. Next, add a layer of cooked sausage, scrambled eggs, and salsa to the tortillas. Add the remaining shredded cheese. Top each quesadilla with another tortilla.

In a small bowl, melt the remaining butter, and brush it on top of the top tortilla. Bake in the preheated oven until the cheese melts and the outside edges of the tortillas turn a light golden color (about 15 to 18 minutes). Remove pan from oven and cut each quesadilla into quarters with a knife or pizza cutter. Serve hot with your favorite salsa. Store any leftovers in the refrigerator and warm them up in the oven or in a toaster oven.
