Apple Pancakes

Description

Delicious, mildly sweet with a crunchy inside, these apple pancakes are perfect as a breakfast, snack or dessert.

Ingredients

  • 3  Eggs, Separated
  • 2 Tablespoons Powdered Or Confectioners Sugar, Plus A Little Bit More To Sprinkle On Top
  • 1-½ cup Whole Milk
  • Pinch Of Salt
  • 2 cups Flour
  • 2  Apples, Your Preferred Variety
  • Vegetable Oil

Preparation

1. Separate yolks from egg whites.
2. In a medium size mixing bowl, mix yolks with powdered sugar. Add milk, followed by salt and flour.
3. In another mixing bowl, beat egg whites until stiff.
4. Add beaten egg whites to the egg yolk mixture and set aside.
5. Peel, core, and dice apples. You can dice them as thickly or thinly you want. I prefer them on a thicker side because I like the crunch.
6. Add diced apples to the dough.
7. Cover the frying pan with a thin layer of oil, heat it on medium low heat. Make sure that the oil is hot before frying your pancakes.
8. Use a large spoon to portion out the dough; fry pancakes on both sides until golden brown.
9. Place each fried pancake on a paper towel to get rid of the extra oil.
10. Arrange them on a plate and sprinkle with powdered sugar. Instead of powdered sugar, you can use honey or maple syrup or any other topping you prefer.
