Homemade crunchy Almond Butter Vanilla Bean Granola with cacao nibs will be your new favorite granola. Packed with wholesome ingredients like oats, almonds, and coconut oil, you will never want the store-bought kind again!
Ingredients
- 5 cups Old Fashioned Oats
- ¼ cups Coconut Sugar
- 1 pinch Salt
- ½ cups Coconut Oil, Melted
- ¼ cups Maple Syrup
- ¼ cups Creamy All Natural Almond Butter
- 2 teaspoons Vanilla Bean Paste
- 1 cup Whole Almonds, Roughly Chopped
- ⅓ cups Cacao Nibs
Preparation
Preheat oven to 350ºF. Line 2 baking sheets with parchment paper and set aside.
In a large bowl, combine oats, coconut sugar, and salt.
Whisk coconut oil, maple syrup, almond butter, and vanilla bean paste in a separate mixing bowl, until smooth. Add coconut oil mixture to oats and stir well, making sure to fully coat oats.
Divide oat mixture and spread evenly on prepared baking sheets. Bake 30–35 minutes, stirring often, until oats are dry.
Transfer baking sheets to cooling racks and allow to cool completely. Mix in almonds and cacao nibs.
Store granola in airtight jars.
