Apple Spice Granola

Description

A delicious and easy fall-spiced granola! My kids love the chewy pieces of apple throughout!

Ingredients

  • 5 cups Oats
  • 1 cup Quinoa, Uncooked
  • 1 cup Pecans, Chopped
  • 2-½ teaspoons Ground Cinnamon
  • ½ teaspoons Ground Nutmeg
  • ½ teaspoons Ground Allspice
  • ¾ teaspoons Salt
  • 1 cup Unsweetened Applesauce
  • ½ cups Light Brown Sugar
  • 3 Tablespoons Honey
  • 1 Tablespoon Canola Oil
  • 1 teaspoon Vanilla
  • 1-½ cup Dried Apples, Chopped

Preparation

Preheat oven to 300ºF. Line 2 baking sheets with parchment paper.

In a large bowl, mix oats, quinoa, pecans, spices, and salt.

In a pot, over medium heat, stir applesauce, brown sugar, honey, and oil together until combined and bubbling. Turn off the heat and stir in the vanilla.

Stir wet mixture into oat mixture, until fully incorporated. Spread mixture evenly and in a thin layer on the 2 parchment-lined baking sheets.

Bake at 300ºF for 45-50 minutes until golden brown. Stir every 10-15 minutes for even cooking. Let cool completely, then stir in the chopped dried apples. Store in an airtight container for up to 1 month.
