Fantastic flavors in this rice pudding for two.
Ingredients
- 1 cup Uncooked Short-grain White Rice
- 1-½ cup Light Cream
- 5-½ ounces, weight Crushed Pineapple And Natural Juices
- 1 teaspoon Ground Cinnamon
- Nutmeg
- ½ cups Coconut Flakes
- Whipped Cream Topping, For Garnish
Preparation
Preheat oven to 350ºF. Spray 2 oven-safe round or oval baking dishes.
In a mixing bowl, add uncooked rice, light cream, pineapples and juice, cinnamon, nutmeg and stir well to combine. Divide between baking dishes. Sprinkle the top with coconut flakes. Place the baking dishes on a sheet pan and put in the oven on the middle rack. Bake 20 minutes or until golden brown.
Garnish with whipped cream, if desired. Serve warm or cold.
