Healthy, homemade granola bars with baked apples and cinnamon. Perfect for breakfast, a quick snack, or school lunches.
Ingredients
- 2 Apples, Cut Into 1/4 Inch Slices
- 1 Tablespoon Cinnamon, Divided
- ¼ cups Sunflower Seed Butter (or Any Nut Butter)
- ¼ cups Honey
- 2 Tablespoons Coconut Oil
- 1-½ cup Old Fashioned Oats
- ½ teaspoons Nutmeg
Preparation
Preheat oven to 250ºF.
Place apple slices in a single layer on a large lined baking sheet. Sprinkle with ½ tablespoon of ground cinnamon. Bake apples for 20 minutes. Flip slices over and bake for another 20 minutes until soft and semi-dry. Let apples cool for about 10 minutes.
While apples are cooling, add nut butter, honey, and coconut oil to a small saucepan over low heat. Stir until coconut oil has melted and mixture is smooth. Take off heat and set aside.
Finely chop the apples into little pieces. In a large bowl, combine oats, apples, remaining ½ tablespoon of cinnamon, and nutmeg. Add nut butter mixture to oat mixture and stir to combine.
Press mixture into an 8 x 8 inch baking dish or a small cookie sheet lined with parchment paper. Place bars in the refrigerator or freezer for at least 10 minutes until firm.
Slice into 12 bars.
