Orange-Pineapple-Lemon Bread Pudding

Delicious dessert for two!

Ingredients

  • 6 slices Bread (I Use Sourdough), Cubed
  • ½ cups Pure Florida Orange Juice (no Pulp)
  • 1 whole Valencia Orange, Zest Only
  • ½ cups Pineapple Chunks With Juices
  • 1-¼ teaspoon Bottled Lemon Juice Concentrate
  • ½ cups Light Cream

Preparation

Preheat oven to 400ºF.

In a mixing bowl, add bread cubes, orange juice, zest, pineapple chunks and juices, and lemon juice. Stir to combine. Pour cream over the top (do not mix in).

In an 8 x 8 inch baking dish sprayed with Baker’s Joy, pour mixing bowl ingredients. Smooth out the top with a sturdy spatula. Place into the oven and bake 15–20 minutes. It will smell wonderful and begin to brown up on top (I check at 15 minutes).

We love this served warm with frozen vanilla yogurt on top. Enjoy!
