Buffalo Chicken Fajitas

Description

Great midweek dinner for two!

Ingredients

  • 2 Tablespoons Canola Oil
  • 1 whole Boneless, Skinless Chicken Breast, Cut Into Strips
  • 1 whole Yellow Onion, Sliced
  • 1 whole Bell Pepper, Sliced
  • ¼ cups (scant) Frank’s Buffalo Sauce
  • 4 whole Flour Tortillas
  • Sour Cream, To Serve

Preparation

In a skillet over medium heat, add oil. When hot, add chicken strips and cook 5–6 minutes. Add onion and peppers and saute 3–4 minutes. Reduce heat to low and add Buffalo sauce. Cover and cook 10 minutes, stirring occasionally.

Warm the flour tortillas in the microwave 20–30 seconds. Fill tortillas with chicken mixture, add sour cream if desired, and enjoy!

Note: I like to serve these fajitas with a side of cooked black beans.
