A healthier twist on caramel popcorn!
Ingredients
- ½ cups Popcorn Kernals
- 1 Large Brown Paper Bag
- 2 Tablespoons Healthy Butter Like Smart Balance Or Earth Balance
- 1 Tablespoon Olive Oil
- 6 Tablespoons Packed Brown Sugar
- ¼ cups Apple Cider
- ½ teaspoons Cornstarch
- 1 teaspoon Pure Vanilla Extract
- ¼ teaspoons Ground Cinnamon
Preparation
To make popcorn, add popcorn kernels into a large brown paper bag and fold the top twice to properly seal the bag. Microwave the bag for 2 minutes or until the popping starts to slow down to a few seconds in between pops. Then stop the microwave and remove the bag. Pour popcorn into a large bowl and remove any un-popped kernels. Set aside.
To make the caramel, add the Earth Balance and olive oil into a small pot and melt together over medium heat. Next, whisk in the brown sugar until it completely dissolves and begins to slightly bubble. Add apple cider and cornstarch and continue whisking. When it thickens, remove from heat and add vanilla extract and cinnamon and set aside.
Pour caramel over cooked popcorn and toss together to make sure all popcorn is covered. Let coating set and serve.
