Description
This frittata is filling but light. A perfect breakfast option or a quick weeknight dinner.
Ingredients
- ½ pounds Chicken Sausage, Removed From Casings
- 6 whole Eggs
- ½ cups Nonfat Milk (or Milk Of Your Choosing)
- ½ teaspoons Black Pepper
- ½ cups Green Onions, Chopped
- 3 cups Mixed Baby Greens (or Spinach, Kale, Or Whatever You Have On Hand)
- ½ cups Parmesan Cheese, Grated
Preparation
Preheat oven to 425ºF.
In a large cast iron skillet, brown chicken sausage. Drain if needed.
Meanwhile, in a bowl combine eggs, milk, black pepper, and green onions.
Toss greens into skillet with chicken sausage and let them wilt, about 1-2 minutes. Pour on egg mixture, and sprinkle with cheese.
Bake 15 minutes or until eggs are set. Enjoy.
