Hungarian (Sweet and Sour) Cucumbers

Description

This has always been one of my most popular recipes. Three simple ingredients and very low in carbohydrates The original was used as a palate cleanser at the Hungarian Rendezvous in NYC.

Only 2 grams of carbohydrates per serving.

Ingredients

  • 4 Tablespoons Red Wine Or Cider Vinegar
  • 4 Tablespoons Sugar Replacement Of Choice
  • 2  Cucumbers

Preparation

Mix vinegar and sugar substitute together until dissolved. Taste for sharpness.

Peel and very thinly slice the cucumbers. Add to the vinegar and toss. Cover and let stand at room temperature for at least half an hour but up to 1 day is also fine. Just toss now and then to distribute flavors.
