Description
Love this any time of the year. Serve it up in a huge pasta bowl with crusty bread.
Ingredients
- 8 cups Coarsely Chopped Spinach
- 8 cups Hot Cooked Cavatappi (about 6 Ounces Uncooked)
- 1 cup Crumpled Feta Cheese
- ¼ cups Olive Oil
- 2 Tablespoons Fresh Lemon Juice
- ½ teaspoons Salt
- ½ teaspoons Black Pepper
- 2 cans (19 Oz. Size) Chickpeas (Garbanzo Beans), Or Other White Beans, Drained
- 4 cloves Garlic, Minced
- Lemon Wedges, For Garnish (optional)
Preparation
Combine ingredients in a large bowl and toss well. Garnish with lemon wedges, if desired.
Note: Optional add-ins include sautéed scallops or shrimp.
