Ingredients
- ¼ cups Butter
- 1 cup Zucchini, Chopped
- ½ cups Onion, Chopped
- 1 cup Red And Yellow Peppers, Sliced
- 3 whole Button Mushrooms, Sliced
- 6 whole Eggs
- ½ teaspoons Kosher Salt
- ¼ teaspoons Ground Pepper
- 1 Tablespoon Fresh Parsley, Chopped
- ⅓ cups Coarsely Shredded Cheddar Cheese
Preparation
In large skillet, melt butter. Saute zucchini, onion, peppers, and mushrooms until tender. In a medium bowl, whisk together eggs, salt, and pepper until frothy. Add to vegetables. Allow to cook for 5–6 minutes.
Sprinkle with parsley and cheese. Transfer skillet to broiler and cook for 2–3 minutes until cheese is golden brown. Cool for 5 minutes before serving. Enjoy!
