Description
An easy and quick lunch to throw together that has bright fresh flavors. This sandwich is a lightened-up version of everyone’s favorite tuna melt.
Ingredients
- 5 ounces, weight Canned Tuna, Packed In Water
- 1 Tablespoon Minced Shallot
- 1 Tablespoon Mayonnaise
- ½ Tablespoons Lemon Juice
- 1 teaspoon Dried Parsley
- ¼ teaspoons Salt
- ⅛ teaspoons Black Pepper
- 2 dashes Tabasco
- 2 slices Whole Wheat Bread, Toasted
- 4 slices Tomato
- ¼ cups Shredded Cheddar Cheese
Preparation
Preheat boiler. In a bowl, stir to combine tuna, shallot, mayonnaise, lemon juice, parsley, salt, pepper and hot sauce. Spread 1/4 of the mixture on each of the toasted slices of whole wheat bread. Top each tuna melt with 2 slices of tomato and 2 tablespoons of cheddar cheese.
Place open faced tuna melts onto baking sheet and broil until cheese is melted and bubbling, approximately 3–4 minutes.
