Ahi Tuna Rice Bowls for Two

Description

Quick, healthy and easy ahi tuna rice bowls.

Ingredients

  • 1 box (6 Oz. Size) BumbleBee Ahi Tuna
  • ½ cups Sliced Cucumbers
  • ½ teaspoons Black Pepper
  • ½ teaspoons Fresh Grated Ginger
  • 1 teaspoon Vinegar
  • ½ cups Uncooked Rice
  • ½ cups Micro Sprouts
  • 1 Tablespoon Sriracha Mayo

Preparation

Remove tuna from the freezer and the vacuum pack and place in the fridge for about 3 hours to thaw.

Add sliced cucumbers, black pepper, ginger and vinegar and to a small tupperware container. Shake up to mix and cover, leave this in the fridge for 3 hours while tuna thaws. This will flavor your cucumbers.

After tuna is thawed, prepare rice according to box directions.

Divide rice into bowls. Divide cucumber mixture equally, place ¼ cup micro greens in each bowl and drizzle with Sriracha mayo. Top each bowl with ahi tuna, garnish with additional micro greens if desired.
