Quick, healthy and easy ahi tuna rice bowls.
Ingredients
- 1 box (6 Oz. Size) BumbleBee Ahi Tuna
- ½ cups Sliced Cucumbers
- ½ teaspoons Black Pepper
- ½ teaspoons Fresh Grated Ginger
- 1 teaspoon Vinegar
- ½ cups Uncooked Rice
- ½ cups Micro Sprouts
- 1 Tablespoon Sriracha Mayo
Preparation
Remove tuna from the freezer and the vacuum pack and place in the fridge for about 3 hours to thaw.
Add sliced cucumbers, black pepper, ginger and vinegar and to a small tupperware container. Shake up to mix and cover, leave this in the fridge for 3 hours while tuna thaws. This will flavor your cucumbers.
After tuna is thawed, prepare rice according to box directions.
Divide rice into bowls. Divide cucumber mixture equally, place ¼ cup micro greens in each bowl and drizzle with Sriracha mayo. Top each bowl with ahi tuna, garnish with additional micro greens if desired.
Serve and enjoy!
