Lemon-Raspberry Freezer Pie

Description

Short cut to a fabulous cold pie for the warm months. Perfect for summertime, and it will cool you down!

Ingredients

  • 1 whole Large Graham Cracker Pie Shell
  • 1 cup Sweetened, Condensed Milk
  • 1 cup Softened Cream Cheese
  • 1 cup Fresh Raspberries
  • 2 whole Fresh Lemons, Half The Zest And All The Juice
  • Whipped Topping, To Serve (optional)

Preparation

Prep time does not include 1 hour freeze time.

In a mixing bowl, add cream cheese and condensed milk. Using a hand mixer on low speed, combine well. Add raspberries and lemon juice and mix on high speed for several minutes. Transfer into pie shell, smooth out. Cover with plastic wrap and freeze for 1 hour.

When ready to serve, remove from freezer and thaw 10 minutes. Garnish with lemon zest, slice and serve. Add whipped cream if desired.
